Ingredients (serve 2)

- 2 mushrooms
- 1 small tomato
- ¼ onion
- ¼ zucchini
- ½ color peppers
- ½ egg plant
- ½ garlic cloves
- 1 tsp olive oil
- 1 tsp balsamic vinegar
- A pinch of salt
- A pinch of pepper

How to cook

1. Cut vegetables and mushrooms into bite-size pieces.

2. Place vegetables and mushrooms in a frying pan or stainless steel pan with chopped garlic. Drizzle with olive oil, balsamic vinegar, salt and pepper and mix briefly.

3. Cover with lid and cook over medium-low heat for 10mins.
